Fresh Tuna Stir-fry with Rocket, Basil & Pepper

Serves 2-3

Ingredients

  1. 1 250g piece of fresh tuna cut into 2-3cm cubes
  2. 1 tspn extra virgin olive oil
  3. 1 clove garlic, finely chopped
  4. 1 TBSP lemon juice
  5. 1 TBSP oregano, chopped
  6. 1 brown onion, sliced
  7.  1 large zucchini, sliced
  8. 1/3 red pepper, sliced
  9. 1/8c lemon juice
  10. 1 clove garlic, finely chopped
  11. cracked black peppercorns, to taste
  12. 1 tspn salt reduced tamari
  13. 1 tspn mirin
  14. 1 TBSP chopped basil
  15. Bunch or good handful of rocket
  16. 1 tspn pine nuts

Method

  1. Combine olive oil, juice, oregano, garlic and toss tuna cubes in mixture and marinade whilst cutting up vegetables.
  2. Lightly spray wok with olive oil.  Add a tablespoon of water and cook marinated tuna quickly, browning on a couple of sides, then remove.
  3. Add onions, zucchini, red pepper and stir fry for a few minutes.  Add back tuna, extra juice, tamari, mirin and garlic.
  4. Take off heat and add basil and rocket just before serving and stir through.
  5. Serve immediately, sprinkled with pine nuts

Note: You can replace rocket with baby spinach leaves if you prefer.  To make the stir fry more substantial, serve on brown rice or quinoa.
