27 Apr Anzac Biscuits
I have always enjoyed an Anzac cookie, but have always limited them due to their very high fat intake! They tend to be full of sugar and butter. So I decided this year would be my first healthy version so I can enjoy one every day with my cuppa.
Walnuts, one of the main ingredients is high in protein, vitamins and Omega 3 fatty acids. I have replaced butter with macadamia nut oil which is contains healthy monounsaturated fats. A perfect snack if you want something healthy and sweet.
Ingredients:
100 grams of walnuts
100 grams of wholegrain oats
75 grams of organic desiccated coconut
¼ cup of honey
¼ cup of macadamia nut oil
½ teaspoon bicarb soda
1 tablespoon of water
Method:
Combine the walnuts, coconut and oats (I used my thermomix)
Combine honey and water in a saucepan and gradually warm it
Mix the bicarb soda and water and then pour into the honey and oil
Bake in a 120 degree oven for about 30 minutes
