Yummy Zuchinni Slice
This is one of the fastest dishes I know that is both healthy and tasty. In fact the whole family loved them and they were pretty much demolished by the end of the weekend.
I like these because you can hide heaps of veggies in them and have really basic ingredients such as eggs, flour and cheese. So lots of protein and fibre to keep you fuller for longer.
Recipe
Ingredients:
- 2 large zuchinnis grated (plus any other veggies you want to add like carrots)
- 1 large onion finely chopped
- 3 rashers bacon finely chopped
- 1/2 cup of reduced fat cheese
- 1/2 cup self raining flour
- 2 tablespoons of olive oil
- 4 eggs
Method:
- Preheat the oven to 180 degrees
- Combine all the ingredients into a bowl
- Pour into a well greased lamington container
- Bake for about 30 minutes or until well browned
- Cut into squares and enjoy with a green salad
