Better brekkies

Start the day in a positive way with some fuel that will stop the belly rumbles. Toast or cereal is fine, if a bit predictable, but if you want something fancier then here are my go to brekkies:

Eggs

Scrambled, an omelette or last night’s frittata, eggs are awesome for breakfast. They are quick to make and you can add loads of different things to them to add flavour or bulk them out. Mushrooms, herbs, spinach, cheese, ham, avocado the list of extras is huge so let your imagination and tastebuds go wild.

Banana Pancakes

If you have a bit of time and need to satisfy your sweet tooth try Banana pancakes. Easy to make and pack a punch you will be fitting these into your breakfast routine in no time.

You need:

2 eggs

1 banana

Mash the banana and mix in the 2 eggs. Heat up a frying pan and put in a little oil. Drop in a couple of spoonful’s of the mixture, cook and then flip over. Enjoy!

Smoothies for brekkie on the run

Green smoothies are sooooo good! You get your veggies and fruit in one hit, they fill you up and are so much better than a coffee and banana bread (admit it, you have had that for breakfast before). Even better they can be made the night before and popped in the fridge so you can have breakfast on the run if you need to.

My favourite recipe is from Simple Green Smoothies for a berry smoothie, but they have loads of ideas you can try out.

Overnight oats

If you love porridge but find it too hot for summer months make the switch to overnight oats. They are simple, tasty and can keep your tummy from rumbling till lunch time.

Your basic recipe is 1/3 cup oats, 1/3 cup milk and a small pot of yoghurt. Mix it all together in a jar and pop in in the fridge. Instant tasty breakfast for you first thing in the morning.

You can add some fruit or chopped nuts, chia seeds or whatever takes your fancy for more texture in the morning when you are ready to eat it.

So banish the boring breakfasts and give something different a chance. Life is too short for toast every day!
