Makes 12
4 free range eggs
2 tablespoon of raw organic honey
3 tablespoon of coconut oil
½ cup of coconut flour
¾ cup of almond milk
1 teaspoon of vanilla
½ teaspoon of baking powder
¼ teaspoon of salt
1 cup of blueberries
Preheat the oven to 180
Prepare a 12-cup muffin tin by greasing with coconut oil
Im a food processor blitz the eggs, honey and melted coconut oil until combined
Add the coconut flour,almond milk, vanilla, bicarb soda, baking powder and salt.
Stir the blueberries.
Spoon the mixture into the prepared tim and bake for 20-25 minutes.
Serve warm with butter.
